Winemaker Mark Smith logs thousands of miles each year visiting the vineyards and growers used to source Cabernet Sauvignon for this wine. North of Napa Valley, in the Red Hills district of Lake County, the high altitude and volcanic soils produce fruit with structure and depth, while to the south, in the Central Coast, the fruit from Paso Robles contributes luscious red berry character. A small percentage of Petit Verdot is added for its signature floral note and mid-palate grip and intensity. The wine was aged for twelve months in French oak barrels for added complexity and polish.

This dark and intense wine opens with concentrated aromas of red currant fruit that mingle with cocoa powder and an earthy chaparral character that speaks of its volcanic mountain origin. Flavors of red currant, dark chocolate, and walnuts are entwined with restrained tannins that give way to a long vanilla oak finish. Pair this Cabernet Sauvignon with a roast pork loin or a steak with chimichurri sauce.

The Hawk Crest 2006 Chardonnay relied heavily on the cool climate growing region of Santa Lucia Highlands. This unique viticultural area is tucked behind the Santa Lucia Mountain Range where ancient, glacial alluvial soils produce citrus fruit characters with vibrant mineral-laden acidity. Situated above the valley floor and protected by a low ridge, the vines capture the full extent of the morning sun before the afternoon maritime breezes cool down the vineyards. This climatic combination results in an especially long growing season. Vineyards further east contribute lush white peach characteristics. When blended together with fruit from Santa Lucia Highlands, the wine delivers bright acidity, minerality, and ripe fruit flavors. In the cellar, modest use of French oak adds complexity, while partial malolactic fermentation and weekly stirring of the lees enhances texture and body.

This wine opens with a beautiful medley of aromas-peach, pear, and honeysuckle followed by a mineral note and a delicate hint of oak. These aromas carry over on the palate with the addition of bright citrus flavors. This Chardonnay has the body of a lithe dancer-strong yet lean-with richness but without weight. It finishes long, with a subtle spicy note and citrus lift. Try this wine with grilled red snapper topped with a mango and pineapple salsa or with chicken in a creamy tarragon sauce.

For many years, the vineyards in the warm heart of San Luis Obispo County have proven to be a quality source of fruit for Hawk Crest 2004 Merlot, offering an abundance of plum and berry notes. In recent years, Hawk Crest winemaker Mark Smith has balanced this richly flavored fruit from the central part of Paso Robles with grapes from the Red Hills district of Lake County, which lies just north of the Napa Valley and is increasingly recognized as an outstanding new growing region. The Red Hills fruit contributes texture and structure to the blend, balancing the rich Paso Robles fruit and creating a wine that is full of character. The wine was aged for seven months in French oak barrels, providing complexity and hints of vanilla to support the wine's abundant fruit flavors. This Merlot is an easily inviting wine with spicy notes of cardamom, clove and cinnamon that accent lush aromas of purple plums and red berries. Plum and vanilla flavors coat the mouth and dance along the palate through a lingering finish. Enjoy this well-structured and medium-bodied Merlot with a hearty dish of Osso Buco, roasted chicken and root vegetables or ratatouille. Yummmmm!
